it's good to see interest in getting a properly developed uni tournament up and running. I'm sure a few of our team would like to help marshall an event providing it does n't clash with other tourney's. The problem as i see it is that you guys aren't entirely sure about what you're trying to achieve. if the goal is to try and raise(or sustain) the number of uni players in your teams then holding a tournament in one place is grossly unfair on the travelling teams and a central location is still a massive amount of travelling time which diminishes some of the fun and increases costs. The best way to recruit new players is to organise fun,cheap events that are easily accessible. maybe try a 3 on 3 on 3 at a local site( if they're agreeable). this has the advantage that you have fun ultra quick games with little paint used and most of your students can find a couple of mates to get a team to enter. Have an attractive prize(and afterparty) as a little incentive. The other nice thing about 3 on 3 on 3 is that you don't need a massive turnout to have a lot of games because of the extra permutations.
If your goal is a championship of the uni's affair (bragging rights for next season etc.) then you need to tag it onto an existing event/organiser as it will be far to expensive to arrange yourselves. To increase your player base you will need as much publicity as possible as effectively you are recruiting for next years tournament.(unfortunately, this is again hampered by location).
