I have thrown caution to the wind and gone with the Panasonic SDR-H85.
One further question please:-

These sdhc memory cards you can buy, do they all fit any camcorder?
I wanna get a 16gb card and wanna make absolutely sure they will work in the camcorder I am getting if the make of the memory card isn't manufactured by Panasonic.

Yeah, SDHC is a universal standard. If you can get a main brand like San Disk and preferably a higher speed one for better performance.
