OMG I've just deleted all my important docs and emptied the recycle bin

That's where you went wrong, right there. Important docs go in 'Backup Folder', Chesney Hawkes mp3s and temporary internet files from PbNation go into the recycle bin to be emptied ASAP!

Get one of these, plug it in, and set it to backup all your important docs every day/week so you've always got a copy!

So just to revive this thread, a buddy of mine had their windows laptop stolen, thief deleted her work documents before selling, laptop got recovered via a tracking device and and we have the laptop back.

We don't think it's been used or anything else has been installed since the thief deleted everything, so we'd like to try using a piece of software to recover the work?

Any recommendations on current software to use?

But dont install it on the same drive!
Download recovery software via a different pc, use it on a USB stick, remove the drive you want to recover and add it to another machine as a secondary, or from the other pc relate a bootable recovery software USB/cd
