I think you've missed the point. Some companies use a computer based stock keeping system. This has a database of all their products and records how many have (as well as other info like location, or expected dates of next delivery). Think tescos. Everytime your tin of beans goes 'beep' some little computer goes '1 less tin of beans in stock' Its probably also thinking that you're a cheap skate for buying value beans, but thats another matter.
What Alex was suggesting was that the website could access this database, and when stock=0, then say so on the website. It wouldn't be a question of employees keeping up.
