Running the Pump guns on air?

An other way of running CO2 is with a siphon tube in the bottle (old school) so the gun pulls up licquid co2 after the first couple of pumps .The advantage of this is more consistant speed ,Disadvantage is not all guns can run on liquid,it is a lot harder on orings and in the winter its is like fog city, you just can't see

Why do so many people use Co2 for Pumps then :/ (When i mean "So many peope" i mean all the youtube videos i have watched =p)
