I have no problem with a paint limit, but I think 500 is too low and will be too much of an artificial change to the nature of the game (see F1 rapid degrading tyres and DRS)
I think playing to time, with a (sensible) paint limit is the compromise that will please both - more points will be played because you don't stop when one team gets to 4/5 but then a per point limit to prevent the consumption from spiralling exponentially.
What may (should) happen with that is that paint consumption will be fairly consistent regardless of if its a fast or slow field. Fast field = lots of resets and slow fields = emptying your pack each point but in both cases you play the full 10/15 minutes...
In fact that would be the case without a per-point limit too - would just be higher.
