Yeah I wouldn't put a date on unopened paint, how long does this stuff sit around in the factory warehouse and then the shop without being moved around? If it's in a sealed bag then this paint will be good for a long time I think.

If they've gone hard, providing they're a nice oily paintball then you could put them in the freezer and see if that will help. The freezer will make the shells more brittle, paintballs do not freeze at that warm a temperature.

Agreed, when I used to bulk order pallet loads of paint, I had some paint that I might have for ages. I have often taken a few odd boxes of sealed paint that has worked a treat after keeping it for over 2 years!!!

Biggest thing is temperature. When I had smaller quantities I normally kept it under the bed.

Unopened bags of paint will keep far longer than you will need. As has already been stated, the key points are

Don't open the sealed bags
Keep at room temperature, out of direct sunlight.
Rotate or shake bags once a week or so.

Here's the key point. If you buy sh*te paint at the start, it's always going to be shi*te. Spend an extra £5 per box and buy good stuff, you won't regret it.
