But I also have a hard time beleiving that a paintball breaks in a barrel because its too tight, because it deforms massively when its fired how would fractions of milimeters make any difference.

Nobody has properly tested this so its all conjecture.
One of my mates had too small a barrel, and they just got stuck.

I use a .689 for everything. If that proves too small, then I go back to the stock .695 barrel (never had to, though). I've never had any issues with accuracy.
