is there any clever way of stopping this, or is the only answer to have a freak set, or a perfectly fitting barrel/ball?

It's a fact of life for us cocker owners.. No ball to barrle match is 100% every ball.
Just live with it and shoot twice when you mug someone... just incase there is no ball the first shot

You can put a bit of nailpolish in the end of the barrel.
This will make the barrel thighter and stop the roll outs.

get a freak system (or the pipe)
see in which insert the paint wont roll out, and take an insert smaller then that.
