i know nothing at all about operating pressures etc. what is the best bottle to go with for an ego 07? or does it even matter...?

get a 1.1 litre High pressure (850psi output) preset
the best regulators are said to be Crossfire.
However, many people use PMI (the EVIL logo bottles) or centreflag (often annodised a nice shade of purpley blue)
if you want the best advice, get a stako bottle.
most of these come with a protoyz reg, which while being unglamorous, will work fine. also, the bottle will be a great match for the marker (lightness)

They are quite expensive, and it isn't hugely worth it unless you're having consistent problems with your current nipple. As I see you're getting a new tank from Planet, it should be perfectly clean inside and adequate for what you need.
If dirt does get inside the nipple, you can take it off (when the bottle is empty!) and clean it, or replace for a new standard nipple which are around £6.
