I ended up buying a Spyder Shutter but I don't understand what good the regulator is or how it works or what it is for. Could someone please explain this to me?

A regulator makes sure that the gas going into your marker is at a set PSI. This means if your are running Co2, it will try and keep it about 800psi (if thats what your gun runs at) and try to stop spikes in pressure that can occur when the temperature changes.
