Yes you can, it's fine.
If you have the option use a 450psi output one but at a push an 850psi will work OK.
Unless it's a classic (double front reg housing and weird shaped grip) You adjust the fps using the Torpedo inline reg (front grip). You would adjust it there even if you weren't using a preset. If it's a classic it's the top one of the 2 front regs.
