Doesn't really need polishing as it's nigh-on indestructible anyway. I believe the new XMags are aluminium to satisfy the demand for those who want their markers in pretty colours, but if you check the AGD (US) site they also do some SS mag bodies in different finishes (including shiny ones!) 
Yes, they are stainless steel.
Yes, you can polish them to a high sheen.
There is no finish on standard mag bodies they are just bead blasted which is what gives them that grey surface finish. It just takes elbow grease and time to make them shiney again. A buffing wheel helps also.
X-mags are aluminium bodies so you can anodise them and make them pretty.

Polished the body and the grip rail? sides, looks well impresive
